Instructions

  1. Pre-heat the broiler to its highest heat.
  2. Cover a baking sheet with foil. Spray with cooking spray or oil lightly.
  3. Beat the egg in a small bowl.
  4. Mix together the almond flour, parmesan cheese, garlic powder, herb seasoning, salt and pepper in a flat dish.
  5. Trim the eggplant and cut into 18 slices.
  6. Dip each eggplant slice into the egg and then the flour mixture.
  7. Place the slices on the baking sheet. Spray each with cooking spray or drizzle on some oil.
  8. Broil until golden brown on both sides, turning when appropriate.
  9. Watch carefully so the slices do not burn.
  10. Pre-heat the oven to 350°F.
  11. Prepare an 8” x 8” baking pan by oiling or spraying as necessary.
  12. When the eggplant is brown place a layer in the bottom of the baking pan.
  13. Sprinkle over one third of the grated cheese.
  14. Repeat with a second layer and cheese and another, third layer ending with cheese on top.
  15. Bake for about 25 minutes until bubbly and golden brown.
  16. Remove from the oven, cut into squares and serve.
